A Perfect Summer Day: Iced Coffee, Tacos, and Watermelon Pie by the Pool With Dinos

Some days are made for slowing down—and today was one of them.

The morning started quietly, the kind of slow pace you don’t want to rush. My husband brought me an iced coffee (because he knows the way to my heart), and we curled up in the living room with the kids to watch TV together. No schedules, no rushing—just a peaceful start to the day.

By lunchtime, the kitchen was buzzing. We decided on chicken tacos, and the kids jumped in to help. They shredded lettuce, sprinkled cheese, and carefully built their own tacos like little chefs. Somehow, food always tastes better when you’ve had a hand in making it.

After lunch, we packed up our swimsuits and headed to my aunt and uncle’s for a pool day. Between splashing contests and floating in the sun, they introduced the kids to a new treat they dubbed “watermelon pie”—graham crackers topped with a creamy mixture of fresh watermelon chunks and Cool Whip. The kids were instantly hooked, and I’m pretty sure this will become a summer staple.

We ended the day simply—an easy dinner, then sprawling out together, just talking and enjoying the slow evening. No rush, no big plans. Just us.

Days like this remind me that the best memories aren’t always about going somewhere exciting or doing something extravagant. Sometimes, they’re built in the quiet moments, the laughter over the lunch table, and the sweetness of watermelon pie shared poolside.
